Roast and Sweet Potatoes

This is a yummy and super easy recipe that James' mom made while she was here. We both liked it so much that I made it again after she left.

Ingredients:
1 beef pot roast - whatever size you want
1 sweet potato per person
1 packet of onion soup mix
1 can of Italian style diced tomatoes (regular would probably be just as good)
water for the roast - maybe 1/4 to 1/2 cup

Directions:
Cook the roast in a crock pot, adding the water, half of the soup mix, and half of the diced tomatoes. Peel and slice the sweet potatoes. About halfway through put them in the crock pot with the rest of the soup mix and diced tomatoes and cook until the roast is done and the potatoes are tender.

We ate this with brown rice. It was really yummy to get a little bit of the rice, the roast, and the potatoes all in one bite. I love that it's so easy and the crock pot makes it even more so. And it's a really yummy/healthy way to eat sweet potatoes, which have lots of nutritional value, but usually also have lots of butter and brown sugar on them.

Well, we're giving it a go tomorrow. Hope it turns out good. Grammy Jo can't quite picture it, but I think it sounds pretty good. We'll let you know!
